5 lbs Beef Tripas
1 Tomato
1 Jalapeno
1/4 cup Onion
1/4 cup cilantro
1 lime
10 corn tortillas
1 Cell phone
Rinse tripas by inserting over faucet and allowing water to run through them
Cut into six inch pieces, rinse again.
On hot disco or large skillet add tripas and cover with water

Bring to a boil

Simmer and stir

Meanwhile make pico de gallo, dice onion, tomato, cilantro and pepper add lime if desired

Add water as needed

Cook down carefully

Wait for em....

Remove from skillet and place on paper towel to drain

Serve hot on warm corn tortillas topped with pico de gallo and a squirt of lime
